  1. Rasgue ou quebre o pão sírio em pedaços rústicos de 2–3 cm. Pincele levemente com azeite e toste em forno a 190°C por 8–10 minutos até ficar dourado e crocante, ou frite em uma camada fina de óleo na frigideira. Tempere com uma pitada de sal.
  2. Bata o suco de limão, o melado de romã, o alho, o sumagre, o sal e o azeite em uma tigela pequena para fazer o molho. Prove — deve ser marcadamente ácido e complexo.
  3. Combine a alface, os tomates, os pepinos, os rabanetes, as cebolinhas, a salsinha e a hortelã em uma tigela grande e larga.
  4. Despeje cerca de dois terços do molho sobre os vegetais e misture delicadamente.
  5. Adicione os pedaços de pão tostado e o restante do molho. Misture mais uma vez — rapidamente — para que o pão absorva o molho sem amolecer por completo.
  6. Transfira para uma travessa, espalhe as sementes de romã por cima, polvilhe uma última pitada de sumagre e sirva em até 5 minutos antes que o pão perca a crocância.
