Kibbeh

Levantine · a family of bulgur-and-meat dishes

Kibbeh is a Levantine family of dishes built from fine bulgur and spiced meat, shaped into shells, trays, torpedoes, or balls and then fried, baked, grilled, poached in yogurt, or eaten raw. Across the Levant and its diaspora the same dish appears as kibbeh, kibbe, içli köfte, and — in Brazil — quibe.

The one detail that makes or breaks the shell: use fine, grade #1 bulgur. Grade #1 (fine) binds into a smooth, pliable shell; grade #3 (coarse) is for mujadara and pilafs and will crack the moment you fry it. Swap them and the dish fails.

The family versions

One dough, many shapes and sauces. Each is a tested family version — start with the baked tray, the most forgiving.

Kibbeh bil Siniyeh

Mount Lebanon

Layered kibbeh baked in a tray and cut into diamonds. The most forgiving version — no shaping.

Idlibi Kibbeh

Idlib

Fried stuffed shells with lamb, onion, and pine nuts, in an Idlib spice profile shaped by the Aleppo corridor.

Kibbeh Aqras

Mount Lebanon

Fried stuffed balls with a crisp shell and a filling of pine nuts and caramelized onion.

Kibbeh Labanieh

Mount Lebanon

Kibbeh balls poached in a stabilized yogurt sauce with mint and dried chili.

Kibbeh Halabi with Sour Cherry

Idlib

Stuffed shells braised low and slow in a tart sour-cherry sauce with pomegranate molasses.

Kibbeh Arnabiyeh

Bekaa Valley

Kibbeh balls simmered in a thick tahini-and-chickpea sauce with lemon.

Kibbeh Mdawara

Idlib

Round stuffed kibbeh grilled over charcoal until smoky and crisp.

Kibbeh Arfaliyeh

Idlib

Elongated torpedo shells, stuffed and fried until deep golden.

Kibbeh Mthallathat

Idlib

Kibbeh shaped into triangles, filled with seasoned fat, and pan-browned until crisp.

Idlib Kibbeh in Yogurt

Idlib

Torpedo shells cooked in a sheep's-milk yogurt sauce fragrant with mint and garlic.

Bekaa Yogurt Kibbeh

Bekaa Valley

Kibbeh balls poached in tangy, rich Bekaa sheep's-milk yogurt.

Kibbeh Nabilsieh

Mount Lebanon

Northern mountain kibbeh, spiced heavily with allspice.

Kibbeh bil Sanieh (Northern)

Mount Lebanon

A northern tray kibbeh with a lighter bulgur ratio and a crackling top crust.

Kibbeh Samakieh

Lebanese coast

Tripoli's fish kibbeh — fine bulgur shells filled with spiced fish and onion, fried gold.

A raw preparation, kibbeh nayeh, also belongs to the family and has its own recipe in the app.

Regional flavor, by place

Kibbeh changes with the pantry around it. In the Idlib–Aleppo corridor it leans on Aleppo pepper, pomegranate molasses, pine nuts, and even sour cherry. In the Mount Lebanon and Bekaa highlands it turns on allspice, rose, and sheep's-milk yogurt. On the Tripoli coast it becomes a fish kibbeh. Same idea, different terroir — which is exactly why one dish carries so many family versions.
