Levantine · a family of bulgur-and-meat dishes
Kibbeh is a Levantine family of dishes built from fine bulgur and spiced meat, shaped into shells, trays, torpedoes, or balls and then fried, baked, grilled, poached in yogurt, or eaten raw. Across the Levant and its diaspora the same dish appears as kibbeh, kibbe, içli köfte, and — in Brazil — quibe.
The family versions

Kibbeh bil Siniyeh

Regional flavor, by place
Kibbeh changes with the pantry around it. In the Idlib–Aleppo corridor it leans on Aleppo pepper, pomegranate molasses, pine nuts, and even sour cherry. In the Mount Lebanon and Bekaa highlands it turns on allspice, rose, and sheep's-milk yogurt. On the Tripoli coast it becomes a fish kibbeh. Same idea, different terroir — which is exactly why one dish carries so many family versions.
