- 1 litre (from about 6 large pomegranates) Fresh pomegranate juice
- 2 tbsp Sugar
- 2 tbsp Fresh lemon juice
Instructions
- Combine pomegranate juice, sugar, and lemon juice in a wide, heavy-bottomed saucepan.
- Bring to a boil over medium-high heat, stirring to dissolve sugar.
- Reduce to a medium simmer (not a hard boil). Do not cover.
- Cook for 50–70 minutes, stirring occasionally, until the juice has reduced to approximately 250ml and the consistency coats the back of a spoon.
- It should be thick enough that a line drawn through the coating on a spoon holds for 5 seconds.
- Remove from heat. It will thicken further as it cools.
- Pour into a sterilized glass jar. Keeps refrigerated for 6 months.
