- 150 grams wild or baby arugula
- 60 grams, lightly toasted walnut halves
- 3 tablespoons fresh pomegranate arils
- 1½ tablespoons fresh lemon juice
- 3 tablespoons extra-virgin olive oil
- ¼ teaspoon salt
- 20 grams (optional) Parmesan shavings
- 1 teaspoon, for drizzle pomegranate molasses
Instructions
- Toast walnut halves in a dry pan over medium heat for 3–4 minutes, shaking constantly, until fragrant. Cool and roughly break apart.
- Wash and dry arugula thoroughly — water on the leaves dilutes the dressing.
- Combine lemon juice, olive oil, and salt in a small bowl and whisk briefly.
- Toss arugula with dressing in a large bowl.
- Transfer to a serving plate. Scatter walnuts and pomegranate arils over the top.
- If using Parmesan, add thin shavings at this stage.
- Finish with a thin drizzle of pomegranate molasses — just enough to add a fruity depth without sweetening the salad.
