- 350 g Yellow split lentils
- 1 large Yellow onion
- 3 tbsp Olive oil
- 3 cloves Garlic cloves
- 1½ tsp Turmeric
- 1 tsp Cumin
- 1½ tsp Salt
- 1.5 litres Water
- 60 ml Fresh lemon juice
- 1 small Onion for garnish
- 2 tbsp Olive oil for garnish
Instructions
- Rinse the split lentils until water runs clear.
- In a pot, heat olive oil and sauté the chopped onion until softened and lightly golden, about 8 minutes.
- Add garlic, turmeric, and cumin. Stir for 1 minute to bloom the spices.
- Add lentils and water. Bring to a boil, then reduce to a simmer.
- Cook uncovered for 25–30 minutes, stirring occasionally, until lentils are completely dissolved.
- Blend with an immersion blender until perfectly smooth. Thin with water if too thick.
- Season with salt. Remove from heat and stir in the fresh lemon juice.
- For the garnish: fry the thinly sliced onion in olive oil until dark golden.
- Ladle into bowls. Top with fried onion and a drizzle of olive oil. Serve with lemon wedges.
